FOOD CHAIN IS CLOSED.

April 6, 2000

Dear Friends,

It's been fun cooking for you. When I started Food Chain my goal was to combine two of my biggest loves: cooking and riding my bike. And I did. What I didn't do was take the really big leap and invest lots of money and quit my day job. In other words, I didn't go for broke. One thing that meant is that my cooking situation has not been stable: I've been using kitchen spaces that weren't mine, working around other people's needs of their space. Recently, it hasn't been working, and suddenly as of yesterday, I no longer have a good place to work.

I had a decision to make: either go for broke now, quite my part-time job, spend lots of money on a commercial space, hire staff and spend money on promotion...essentially become a small businessperson instead of a chef who rides his bike...or suspend Food Chain. Since I'm not prepared to devote my life and savings to it, that's what - with sadness - I've decided to do.

So today is your last Food Chain meal: I'm terrifically sorry about that. Some time in the future, I may start it up again if I can find a more stable, affordable working situation, and if so I will let you know.

I'd be happy to answer any questions you have, and to refer you to Jane Peal Cuisiniere, http://www.pealcuisine.com/ who delivers wonderful veggie food.

Bike Appetit,

Stefan Lynch
